[Sue] What we’re asking you to do is to make and ice 25 fondant fancies. Correct artisan, fantastically executed, fondant fancies. You want a sq. of delicate mild sponge, a dome of buttercream… all encased in a shiny fondant.
[Mel] All the perfect. That is your final technical problem.
[Mel, Sue] In your marks… Get set… Bake.
Elements – For the sponge
Self-raising flour – 225g / 8oz
Baking unfold or softened butter – 225g / 8oz
Caster sugar – 225g / 8oz
Grated rind solely – 1 lemon
Free-range eggs – 4
For the buttercream
Unsalted butter, softened – 250g / 9oz
Icing sugar – 200g / 7oz
For the marzipan topping
Apricot jam – Three tbsp
Marzipan – 200g / 7oz
For the icing and ornament
White fondant icing – 1 kg / 2lb 4oz
Water – 150ml / 5fl oz
Darkish chocolate – 100g/3½oz
