INGREDIENTS:

#1 Apple & Pear Oat Crumble

Three pears
2 apples
¼ cup apple juice (60ml)
1 tsp corn starch
a splash of cinnamon

½ cup small decrease oats (45g)
1/4 cup spelt flour (30g)
¼ cup nuts, chopped
¼ tsp salt
¼ tsp baking powder
½ tsp cinnamon
2 ½ tbsp melted coconut oil
2 tbsp non dairy milk

→ serves 4

#2 Chocolate & Orange Ice Cream Cake

Cake Half:

1 cup oat flour (90g)
2 tbsp corn starch
2 tsp baking powder
Three tbsp cocoa powder
⅓ cup raw, date or coconut sugar (80g)
Three tbsp melted coconut oil
1 flax egg = 1 tbsp flax seeds + 2 tbsp water
1 tsp vanilla
juice of ½ lemon
1 cup non dairy milk (250ml)

Cream Half:

1 cup cashews, soaked in water in a single day (125g)
¼ tsp salt
juice of 1 lemon
½ cup canned coconut milk (125ml)
½ cup plain soy yogurt (125ml)
½ tsp orange, clementine – zest
2 tbsp corn starch
¼ cup + 1 tbsp raw sugar (or date, coconut sugar) (62g + 1 tbsp)

→ for one eight or 9 inch cake pan

Vegan Chocolate Sauce:

1 tbsp cocoa powder, unsweetened
1 tbsp agave or maple syrup
2 tsp melted coconut oil
a pinch salt

→ combine the entire elements until straightforward 🙂
→ alter flavour if wanted

#Three White Bean Pumpkin Spiced Cookie Dough

1 can white beans, rinsed (240g)
1 cup oats, small decrease (90g)
⅓ cup raw sugar (80g)
¼ tsp salt
2 ½ Tbsp melted vegan butter or coconut oil
⅓ cup pumpkin purée (75g)
1 tsp pumpkin pie spice
(= ½ tsp cinnamon, ¼ tsp dried ginger, a pinch of nutmeg, ¼ tsp cloves, a splash of allspice)
My basic chocolate chip cookie dough recipe:
#4 Gingerbread Good Cream

2-Three bananas, frozen
1 tbsp cocoa powder, unsweetened
¼ tsp gingerbread spice (or pumpkin pie spice)

vegan chocolate sauce*
toppings of other: granola bar, shredded coconut, chia seeds, and so forth

→ serves 1
