Small Batch Easter Baking

Easter gatherings might look a little different this year, but that doesn’t mean you and your family can’t still celebrate and enjoy your favorite recipes and traditions. Because we’re all isolated at home, we’ve rounded up five of our most popular Easter recipes and scaled them down to serve a smaller crowd. From Carrot Cake Bars to Hot Cross Buns, we’re hoping these recipes will restore some normalcy and provide small-batch baking inspiration from our family to yours.

  1. Classic Hummingbird Cake

Bits of juicy pineapple and toasty pecan coalesce with sweet banana and warm notes of cinnamon, all blanketed in swoops of Cream Cheese Frosting. This hefty cake is far less diminutive than the bird it’s named for. You don’t cream the butter and sugar. (No stand mixer needed for the cake layers!) This method, along with the myriad of batter ingredients, lends a dense, crumbly texture that verges on half-cake, half-quick bread. It tastes even better the next day.

2. Classic Hot Cross Buns

Classic Hot Cross Buns

Soft and pillowy with just the right amount of sweetness and spice—one bite into this classic and it will be in heavy rotation at your house, no matter what time of year.

3. Carrot Cake Bars

Who needs cream cheese frosting when you’ve got a layer of cheesecake filling? These bars combine two of our favorite cakes in one: crumbly chunks of carrot cake baked into a velvety layer of cheesecake. Fair warning: you may not be able to have one without the other again.

4. Almond Bundt Cake with Coconut Glaze

Simple, elegant, and a touch whimsical, this Almond Bundt Cake with Coconut Glaze was made with Easter in mind. Nordic Ware’s 6 Cup Heritage Bundt Pan lends a mesmerizing swirl to this sour cream pound cake, forming the perfect canvas for our rich Coconut Glaze. Finish the cake off with toasted coconut and candied chocolate eggs to make a centerpiece-worthy Easter egg nest.

5. Milk Chocolate Egg Cookies

A nostalgic ode to Easter candy, this Cadbury egg-studded cookie is all about the texture. Crispy on the outside, chewy on the inside, and with a boost of crunch from the candy-coated chocolate eggs, it’s a new and improved way to indulge in the iconic Easter treat.
